Four Cheese Macaroni Bake

3 cups elbow macaroni
1 cup minced onion
2 cloves garlic -- minced
1 teaspoon olive oil
1/3 cup flour
3 cups skim milk
3/4 cup non-fat cottage cheese
1/2 cup shredded extra sharp cheddar
1/2 cup shredded mozzarella cheese
1/2 cup shredded fresh Parmesan -- plus
1/4 cup shredded fresh Parmesan
1/4 teaspoon salt
1/4 teaspoon pepper
2 shakes Tabasco sauce
1/2 cup dry bread crumbs

Preheat the oven to 375F. Coat 13- x 9-inch dish with cooking spray.

Cook the macaroni in a large pot of boiling water according to package
directions. Drain very well. Place in a large bowl.

Coat a large sauce pan with non stick spray and place over med-high heat
until hot. Add the onions, garlic and oil. Cook, stirring, for 5 minutes or
until the onions are golden brown. Add the flour. Cook, stirring, for 2
minutes.

In a blender combine the milk and cottage cheese, process until smooth. Add
to the skillet; cook stirring constantly, for 5-7 minutes or until the
sauce thickens. Add the cheddar, mozzarella and Parmesan. Cook for 2
minutes. Stir in the macaroni, salt and pepper. Spoon into the baking dish.

In a small bowl, combine the crumbs and the remaining 1/4 cup Parmesan.
Sprinkle over the macaroni and bake for 30 minutes.

Freeze portions, wrapped in plastic wrap then in freezer bags. Thaw in the
fridge overnight. Heat each portion in the microwave for 3 minutes.

Frankfurter Crown Casserole

2 slices bacon
1/2 cup chopped onion
1 can condensed cream of mushroom soup
1/2 cup water
1/2 teaspoon salt
1 dash pepper
3 cups sliced cooked potatoes
1 cup cooked cut green beans
1/2 pound frankfurters -- (about 7)
split lengthwise and cut in half

In a skillet, cook the bacon until crisp; remove and crumble.
Cook the onion in the drippings.
Stir in the soup, water, salt and pepper.
Add the potatoes and beans.
Pour the mixture into a 1 1/2-quart casserole.
Stand up the frankfurters around the edge.
Bake at 350F for 30 minutes.
Sprinkle the crumbled bacon over the top.

Serves 4.

Variation - for German-style seasoning just add 1 to 2 tablespoons of
vinegar with the soup.

From unknown source, probably a newspaper; handwritten in a binder with
recipes I collected back in the 1960's (yes, I'm that old).

Hallie's note: When we were just starting out as a married couple we went
through some pretty tough times financially and I learned to make the most
of the limited types of food we could afford. I don't remember the details
anymore but I do remember we must have got a real bargain on wieners at one
stage because I made a lot of dishes with them. This may be one of the
reasons I very seldom buy them anymore. <G> A note I made at the bottom of
this recipe says this is really delicious and one of Buddy's favourites.
Now that I've found the recipe again I may try a variation on it using
smokies or some other sausage in place of the wieners, vary the seasonings
a fair bit, add some garlic and hot stuff, possibly add some peas, fresh
mushrooms; lots of room for experimentation with this one.
