No Tomato Pasta Sauce

1 1/2 pounds Italian turkey sausage
1 tablespoon olive oil
1/2 cup butter
1 cup sweet onion -- chopped
4 garlic cloves -- cleaned and diced
2 tablespoons capers
1 can mushroom soup, condensed -- (large can)
1 cup sherry
1 cup chicken broth
1/2 cup milk -- or half-and-half
2 cubes chicken bouillon -- crushed
1 cup shredded cheese
Salt and pepper -- to taste
In large skillet, over medium heat, cook sausage in oil, until sausage is
brown. Remove sausage and reserve. Add butter to pan and bring to
temperature, add onions and garlic; sauté until onions are translucent.
Add capers, and stir for one minute. Add mushroom soup, sherry and broth.
Cook for a few minute, stirring to combine. Add milk and bouillon cubes and
return sausage to the pan; cook until desired thickness is just about
attained. Turn off heat and stir in shredded cheese until melted. Add salt
and pepper to taste. Easy on the salt due to the saltiness of the other
ingredients.
Serve over cooked pasta.
