1/2 cup fresh parsley -- minced
2 tablespoons garlic salt
2 tablespoons dried basil
1 tablespoon dried oregano
1 leg of lamb -- boned, 5 to 6 lbs.
1 pork tenderloin -- (8 oz.) trimmed
1/4 cup olive oil
4 garlic cloves
1 teaspoon salt
Stir together the first four ingredients in a bowl, sprinkle 1 tablespoon
mixture over lamb. Place tenderloin in center of lamb. Roll up; tie with
string at 1-inch intervals. Sprinkle with 1 tablespoon parsley mixture.
Stir together oil, garlic and salt; brush over lamb.
Place, seam side down, in a roasting pan. Bake at 350F. for 2 hours or
until a meat thermometer inserted into thickest portion registers 160F. Let
meat stand 10 minutes before slicing.
Cover and chill remaining parsley mixture to season other meats.
