Contributed to #FareShare IRC Chat, 17 March 1999, by brightl. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Irish Chocolate Potato Cake Recipe By : Out of Old Nova Scotia Kitchens Serving Size : 1 Preparation Time :0:00 Categories : Fareshare Chat 048 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- **Cake** 1 cup butter 2 cups sugar 4 eggs 3 ounces unsweetened chocolate -- melted 1 cup mashed potatoes -- cold 1 cup sour milk 2 cups flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon cinnamon 1/4 teaspoon nutmeg **Chocolate Icing** 1/4 cup butter 2 ounces unsweetened chocolate -- melted 3 cups icing sugar -- [powdered sugar][at least] Hot water 1 teaspoon vanilla Preheat the oven to 350F. Grease and line two 9-inch layer pans. Combine the ingredients in the order given. Pour into the prepared pans and bake for 35 minutes or until done. Cool in the pans for 10 minutes, then turn out onto racks to finish cooling. Fill and ice with chocolate butter icing. Because this cake is very moist and will keep beautifully it needs a good rich icing that will keep well and not dry out. Rich Chocolate Butter Icing: Combine the butter, melted chocolate, at least 3 cups of icing sugar in a bowl. Beat in enough hot water to bring the mixture to the right consistency. Contributed to FareShare IRC Chat, 17 March 1999, by allium. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Salmon with Cucumber and Cream Sauce Recipe By : Epicurious Serving Size : 4 Preparation Time :0:00 Categories : Fareshare Chat 048 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 pounds salmon fillets -- 1 inch thick [2 fillets] 2 tablespoons butter -- melted 1 tablespoon chives -- chopped 2 cups Whipping cream 2 medium cucumbers -- peeled, seeded and chopped juice of 2 or 3 lemons salt and pepper -- to taste Preparation : Place salmon fillets in greased baking dish. Brush butter onto the salmon and season with salt and pepper. Top with chives. Pour cream into baking dish. Cover and bake at 350 degrees for 40 to 50 minutes, or until fish begins to flake. (Thinner fillets may require less time.) Remove fillets from oven and add lemon juice and cucumber. Baste the salmon well and return dish to the oven, uncovered, for an additional 15 minutes.
