Layered Christmas Jello Recipe

LIME LAYER:
1 package (3 ounces) lime gelatin
1 cup boiling water
1/3 cup unsweetened pineapple juice
1 cup crushed pineapple, drained

CREAM CHEESE LAYER:
1 teaspoon unflavored gelatin
2 tablespoons cold water
1 package (8 ounces) cream cheese, softened
1/3 cup milk
......
BERRY LAYER:
2 packages (3 ounces each) strawberry gelatin
2 cups boiling water
1 can (14 ounces) whole-berry cranberry sauce
Whipped topping, optional
1. Dissolve lime gelatin in boiling water; stir in pineapple juice.
Stir in pineapple. Pour into an 11 x 7-in. dish; refrigerate until
set.
2. In a small saucepan, sprinkle unflavored gelatin over cold water;
let stand for 1 minute. Heat over low heat, stirring until gelatin
is completely dissolved. Transfer to a small bowl. Beat in cream
cheese and milk until smooth. Spread over lime layer; refrigerate
until set.
3. Dissolve strawberry gelatin in boiling water; stir in cranberry
sauce. Cool for 10 minutes. Carefully spoon over cream cheese layer.
Refrigerate until set.
4. Cut into squares. Garnish with whipped topping if desired. Yield:
10 servings.
TOTAL TIME: Prep: 30 min. + chilling
YIELD: 10 servings
NOTES: I made this in December 2014 and it was pretty good. It
brought back memories of Christmas time at the in-laws. Our dish was
12 x 7 so it turned out a little on the thin side. Next time we will
use a smaller dish and probably double the lime layer. Also, we had
pears on hand, so I used those instead of pineapple. Just threw
several in the food processor and with a couple of whirs it looked
very much like pineapple. We used the pear juice also.
My granddaughter and I made it again a week later. We used bananas
instead of cranberry sauce in the berry layer. They tended to float
so you need to use a thin layer to set first, then fill in around
and over the bananas. We chose to add a fourth layer using mango
jello combined with "Cool Whip" and it turned out great.

One of my mom's stock Holiday dish's was the Lime layer of this with
the addition of toasted Pecan pieces added at the same time as the
pineapple. She used a clear serving bowl. I will try this.

Pizza Stuffed Crescent Rolls

1 package Pillsbury Crescent Dinner Rolls
8 teaspoons Pizza Sauce
24 slices Hormel Turkey Pepperoni
8 tablespoons Shredded Fat Free Mozzarella
Preheat oven to 375°F (350° for dark or nonstick cookie sheet).
Unroll dough and separate into triangles. Press the dough to flatten
into wider pieces.
On the bottom of each triangle, add one teaspoon pizza sauce,
keeping centered, away from sides and corners. Add three pieces of
pepperoni, and one tablespoon cheese. Roll each piece up, and curve,
as instructed on the crescent roll package. Try to pinch the dough
where any holes may have formed, to keep the ingredients sealed in.
The first few may start off messy, but bake them anyway! It gets
easier with practice.
Bake on ungreased cookie sheet for 13 to 15 minutes, until golden
brown.
I add extra items like sausage and olives.

Faux Fried Cheese Sticks

4 reduced-fat string cheese sticks
1 tablespoon flour
1 cup panko (Japanese bread crumbs)
1/2 cup egg substitute (or 2 egg whites)
1 1/2 tablespoon Italian Herb Seasoning Blend
Preheat the oven to 375 degrees. Spray a baking sheet with cooking
spray.
Pour the flour onto a small plate.
Cut the cheese sticks in half. Roll the cheese sticks in the flour.
Place the breadcrumbs and Italian herbs in a small container with a
lid or zip-top bag and set aside.
Pour the egg substitute into a shallow dish. Using one hand, roll
the floured cheese sticks in the egg mixture. One at a time, using
your other (dry) hand, transfer the cheese sticks to the bread crumb
mixture and shake to coat. Using the dry hand, remove from the crumb
mixture and place on the baking pan. Continue until all the cheese
sticks are breaded.
Spritz each cheese stick with cooking spray. Bake for 10 minutes or
until cheese is bubbly and melted.
If desired, dunk these cheese sticks in low-sodium tomato sauce.
These tasted good and were lower in fat than the deep-fried ones.

Cheesy Venison Casserole

1 pound ground venison
1 can cheddar cheese soup
1 can cream of celery soup
10-15 ounces crinkly cut fries, frozen
Heat the oven to 350F. Press ground venison into the bottom of a
7x11-inch pan. Mix soups together and pour evenly over meat. Top
with a single layer of crinkly cut fries (with little to no space
between the fries).
Bake 45-55 minutes or until cooked thoroughly.
